Foodie Friday | Recipe for The best {yet healthy} dressing drenched Dill-icious Salad

As the weather finally gets warmer, my body is craving more raw fresh fruits and vegetables rather than my beloved winter soups and warmer dishes. Do you feel the same way? Even if you’re just getting started with healthy eating, the number one tip I can give is incorporating more raw fruits & vegetables and less processed food. This is the perfect time of year for this because our bodies crave raw veggies and salads.

So after seeing this delicious looking salad, I thought I’d share a recent recipe creation I’m loving.

This is the salad for people who don’t like salad. It is delicious, only requires very few ingredients, can be done in seconds, and is a hit with everyone from the raw foodie to the junk foodie.

Did you grow up believing that salad (or everything for that matter) had to be drenched in dressing, particularly Ranch, to be be edible? Well this is the salad for you. The Dill in the dressing gives it a ‘Ranch’ flavor that your taste buds will love.

What do you need?

Fresh Dill

Romaine  lettuce (could use any green you like, even massaged kale etc.)

sprouts

1 small ripe avocado

sea salt/ optional organic garlic salt for extra flavor

fresh ground pepper

raw apple cider vinegar

juice of half a lemon

optional: keep it simple like this or add in any other chopped veggies of your choice, including sea veggies (I love adding dulse.) 

What do you do?

Just chop your romaine and dill and toss it all in a huge bowl, add about 3 tablespoons or more apple cider vinegar, and your lemon juice. Add salt and pepper. Toss then slice your avocado and scoop it all into the bowl. This is where your hands will get dirty…mush the avocado with your hands and massage it into the salad, make sure it is all covered and there are no chunks of avocado not mashed. It should look like guacamole with veggies in it.
